I have gluten intoler...Spelt is a variety of wheat. I have gluten intolerance so regular wheat and white flour are mostly out of the question for me. I can get away with a bit here and there, but for the most part I have to use other flours. Spelt is darned tasty and can be used like wheat although its lower gluten content often has to be made up with xanthan or guar gum.Leah J.
